Why, outside of greater New York City, is it so difficult to find a good bagel?
Honestly, it shouldn’t be that difficult.
- Light & fluffy.
- Not overly topped.
- Simple ingredients.
- Water. Flour. Salt. A little sugar and oil. Yeast.
- Just the right amount of mixing; adequate time to rise.
- Boiled. Topped. Then baked. Really hot, really fast.
Served with whatever you prefer, but honesty if it is a good bagel, you can eat it fresh and hot, right out of the oven with nothing on it.
