This week, the best thing you can do is just remember to keep it simple.
Don’t go all crazy running around, going to Walmart on the busiest week of the year for something and as basic as chicken (I hear they sell that there) and gold duck tape (which, is actually out of stock – FYI.) I guess there are some folks out there who needed to repair their C3PO costume for the movies this weekend and bought it all out.
Tonight’s dinner – I totally decided to keep it simple. It’s going to be a long week… and this was our menu: salad with a lemon vinaigrette, rice pilaf, and chicken (not from Walmart, that was someone else I know) sauteed in olive oil with salt and pepper. Finished with thyme, rosemary, butter and a lovely Pinot Grigio that Mike made this year… a glass enjoyed with dinner, too. Quite inspired by our bookies dinner last week at ComfortFood – even though the risotto was better and the green beans were far better than a salad, this was a simple dinner, prepared in 30 minutes or less, on a Monday night and everyone enjoyed it.
